8 MINUTE ENERGY BITES

  • RECIPE TYPE: SNACK
  • 1 cup large oat flakes
  • 2/3 cup unsweetened coconut flakes
  • ½ cup natural peanut butter
  • ½ cup ground flaxseed
  • 1/3 cup agave nectar
  • 1 tsp vanilla extract
  • 1 scoop vegan protein powder (try a vanilla or chocolate flavour if you’re feelin’ fancy)
  1. Toss all the ingredients into a medium sized bowl and stir until thoroughly mixed.
  2. If the mixture isn’t a sticky consistency, feel free to add more peanut butter or agave.
  3. Get messy! With your hands, form the mixture into small ball shapes (about half an inch in diameter).
  4. Store the bites in an airtight container and keep ‘em refrigerated for up to 1 week! If you’re looking to keep them a bit longer, storing in the freezer will do the trick.
